So I've managed join up with her, we're addressing her napping with the pacifier and giddy up rope, working really well, but the next issue I want to address is the fact she won't settle in the stable and come the winter she'll need to be in at night. Does anyone know how I can help her settle down and not work herself into a lather?

Give her some hay to munch, she'll feel much better about being in the stall when her grazing time is not being obstructed. Have you tried grooming/ petting and talking to her in the stall? Being with her in there could help. Give her some sweet feed/treats in her bucket- this helped my horse who refused to go in her stall - so the horse looks forward to going in.
You want to make the stall a safe and comfortable place for her to be. So anything that you can do to make it a place that she wants to be will help her. You take her in for short periods of time give her some sweet feed, brush her make it a good experience and then take her out. Increase the time she's in there each time, before you know it she'll look forward to being in her stall.
