Hi. Sweet iron & copper bits encourage more saliva production & so help the mouth be lubricated - a dry mouth can get very sore very quickly. Whilst stainless steel is a convenient material for the horse owner, being low maintenance, it's less user friendly to the horse as ( I think ) it has a colder property than sweet iron & copper so the horse is less inclined to salivate. If anyone wants to add to/ correct me please do as this is not my area of expertise. Cheers. Jo.
