i would like to know if there are any training techniques that can train a horse to stop if rider is either falling off or has fell off.

I've seen this done & demonstrated by Kelly Marks at Monty's tours in the UK.

She uses a dummy first then a rider who deliberately falls off.

If you search on Kelly Marks and "Pie" (her horse) you will see some youtube stuff. I think the technique is documented in one of her books - look at the http://www.intelligenthorsemanship.co.uk/
